We have a total glut of plums at the Welsh Hovel this year and thus Joshua and myself are hard at work harvesting, palming them off on neighbours and then and turning those that we do not devour freshly picked into anthing we can think of. This weekend it wll be plum ice cream ( now underway), plum and cinammon jam, plums flash frozen and plums stewed and then frozen for autumn breakfasts with almond milk. But frst up was an upside down plum, honey and ginger cake.
Luckily, I had very low blood sugars on the day the cake arrived and thus it was almost advisable on medicinal grounds for me to enjoy a couple of squares. The consensus of the chefs ( myself and Joshua) is that it is even better than our rhubarb and ginger cake.
